George Stefos and his family grew up on the shores of the lagoon of Messolonghi-Aetoliko and learned the art of botargo from traditional fishermen. For decades Stefos botargo, based on a traditional homemade recipe, was known in a small local circle that appreciated it and enjoyed it as a delicious and nutritious daily food but also as a precious festive treat.

In 2008, together with his children and a team of food technologists and experienced experts in the promotion of products, they founded a company based in Aetoliko, and envisioned a way to share with the world the unique products of the lagoon, marrying tradition with innovation. The company built innovative, for Greece and for the whole world, facilities for the processing, packaging, and promotion of open sea, lagoon and aquaculture products, equipped with the most modern and innovative machinery in a plot of 3,000 square meters in Aetoliko and have been designed in full accordance with the international food safety standards ISO 22000 – HACCP TÜV NORD.

The philosophy of the Company is to produce high quality products with the purest, fresh, and natural ingredients, to offer high services to its customers, to be reliable, to honor the employees and to respect the environment.  

Each product that leaves the factory is a unique ambassador who travels to every corner of the earth to introduce the consumer to a unique culinary journey. The Company’s vision is to create a series of excellent quality botargo products as well as products of the lagoon that are appreciated by the connoisseurs of the whole world while the goal is to develop rapidly, remaining faithful either to the vision and philosophy mentioned above.
