The famous roe of Messolonghi, the "Greek caviar" is also produced here. The only Greek fishery Product of Designation of Origin (PDO) to date. It is produced from the eggs in the ovaries of the buffalo, the female mullet, which lives in the lagoon, which are salted, dried and covered with a thin layer of natural wax.
