Feta, is known in northern Greece mainly as Cheese, is a cheese product of Protected Designation of Origin. It is prepared exclusively from sheep's or goat's milk. It is a mixture with up to 30% goat's milk. The taste of feta is salty and is stored in brine or sour milk liquid for about 3 months. Once removed from the brine, the feta loses all its fluids and becomes more compact. Feta is white, while it is usually stored in large square pieces. The variety also varies depending on the hardness of the cheese. So, we can find it from hard to very soft form. The taste differs accordingly. The fat content ranges from 30% to 60%, while the average is around 45%. |
